I would personally suggest FireRed Omega - it's much more difficult than the original FireRed, but gives you a great selection of Pokemon due to there being all of the Pokemon available in that generation and getting the National Pokedex early. It's not the hardest hack out there (the hardest I've played is Crystal Kaizo, a sequel to the hack Blue Kaizo, which itself is very difficult, and I would recommend), but it's the best one I've played.
