If you want the hero garden, you must pet the chao with a hero character. It should be turning all white with blue on the hands and feet with a yellow stomach. Wait until your chao evolves. It should turn into a hero chao then Boom! you've unlocked the beloved hero garden.
If you want the dark garden, you must pet the chao with a dark character. It should be turning black with red on the hands and feet. Wait until your chao evolves. It should turn into a dark chao then Boom! you've unlocked the dark garden.
