Java is updated through the Mac's Software update system. Click on the Apple menu icon in the top left corner and select Software Update... This will check which updates are available for your computer. From the list of available updates select which ones you want to install and click the Install button. Your software will be automatically updated. Restart Camino and it will find the latest version.
