You could "farm" souls off of easy enemies but it takes a long time, there are certain places you can exploit, such as the dragon bridge, hide down the stairs in the middle of the bridge then go down to the bonfire, go up the stairs but run back in before the dragon's fire hits you, about 500 souls per try.

Find somewhere near a fire that contains a large amount of enemies but is also easy to escape from, hard to depict where exactly but somewhere along those lines... never found a good farming location myself
