Well technically you can't "break" the passcode but you can restore it by going onto itunes connecting the itouch then sending it to recovery mode the itunes will send a message telling you that they detected an ipod in recovery mode and it will ask you to restore it you click restore and the computer should do the rest. But do keep in mind that this only works for ipods[including itouch] and iphones, it does not work for ipads.
If your iTouch is locked with a passcode, then only the person who locked it knows the passcode.
If you do not know the passcode, you cannot get past the iPod Touch lock screen.
To remove your password, go to:
>Settings
>General
>Passcode Lock
>Turn Passcode Off

When speaking about iPod Touches, 'passcode' and 'password' are two synonyms for the same meaning. 'Passcode' is used more often, though.

The only way to prevent access to an iPod Touch that was stolen is if you have a passcode on it.
When you unlock a passcode that has been forgotten on your iPod Touch, all of your songs will unfortanetly be deleted, and you will have to put all of them back on. But if you are CHANGING your passcode, off of the settings button on your iPod Touch, nothing will happen to your current memory.
You can and you can't. The only way to get past the passcode if you forgot your passcode is to do a restore through iTunes.
