If a character wishes to travel with you on one of the post storyline Companion quests he will stay with you until the quest is complete. The only way to cancel this is to reload a save before the quest was triggered.

I got a Sun Dragon by breeding Fire and a Storm Dragon. I don't know how to breed the Moon Dragon though. I am still working on it.
Skyrim is known for it's crashing, but not EVERY time. If you were being serious about it crashing every single time, possibilities are that your disk is scratched, you have currupted data, or you need to download an update.
