The only way to empty your bucket of milk would be to make a cake.
Left click the cow while holding a bucket.
Make a bucket, hold it in your hand, then right click on a cow to fill it with milk.

Milk is used as a food item. Unlike other items in buckets milk can be drunk from the pail. Milk does not replenish health or hunger but it will remove status effects like poison. Milk can also be used as a crafting ingredient in cake along with eggs, wheat and sugar.
In the 3x3 grid, put 3 buckets of milk at the top. An egg in the middle, 2 pieces of sugar on either side. Then put 3 wheat at the bottom.
Sugar in minecraft is used to make a cake but you also need 3 buckets of milk and 1 egg when you have made the cake you can eat it to gain your health. Also, in 1.4.2, if you combine sugar, an egg, and a pumpkin together, you will get pumpkin pie.
