The "change oil light" doesn't run off of the quality/quantity of the oil; it runs off of the odometer and the "memory" of the last time the "change oil light" was reset. In other words, if you changed the oil at 3,500 miles and reset the light at that time, the light will automatically come on at 7,000 miles as a reminder to change the oil. When you are getting kinda low on oil and it is almost to where you need an oil change when you brake it sloshes the oil and makes the light go off.

UK 2005 model upwards. Ignition off. Hold both trip buttons in. Ignition on, wait for dashes to go off. Release trip buttons. Ignition on. Start engine. Oil change light should be off.
Evidently the oil level was low before you changed oil and was full thereafter.
I have a 2000 Intrigue, just got my first oil change. Almost immediately after that the "change oil light" has come on each time I started the car. I think it is just from the car keeping track of miles but it is disconcerting.
