The only way to reach 5k altitude and beat this achievement is to do a maneuver where you power dive briefly to gain speed, then pull up at the highest angle and use your speed to climb. Conveniently unlike real physics, you can gain altitude by doing this. The most efficient way to climb with this seems to be to dive until the dial on the speed meter just passes the word "speed," then climb until it points straight left, just before the low speed alarm sounds. I guess this is the maneuver they call "dolphining" in the description. Obviously you want to start climbing on a thermal such as the one at "The Mushrooms" which will get you to over 3k. The whole process will take awhile but should be easily done in less than 10 minutes.
