You don't. As far as I can tell he doesn't exist yet, and will be in the Far Future expansion eventually. One stupid "strategy" site talks about fighting him, but its confused with PvZ 1, talking about how you fight him on the ROOF (doesnt exist in PvZ2) are limited to Jalapenos (which is locked!) and various other plants on the conveyer belt.
Then other idiot websites blindly copy and slightly modify those "strategies" which are totally bogus. You will notice you cannot find ANY YouTube vid of Zomboss in PVZ2.
