I know it's hard but it is their house and a cat can live for 17 years. When you move out or go to school you might not be allowed to take it with you to the new place so your parents will be stuck with it. Try to find another family or give it to a shelter.
Maybe if you tell your parents that you would like to rescue a pet by adding one to your family they may see your request differently. Let them know that it's not only about being responsible but about doing something good for a creature that can't help itself.

Well, what do you mean by "she's leaving with someone?" Do you mean, you have found someone to adopt the cat? If so, then my advice would be to just let the cat go with her new owner. It's hard, I know, but if your parents say that 3 cats is the limit, then there's not much you can do. Unless the cat is being taken to an animal shelter, you just have to let her go. If she were going to an animal shelter it would be a different story, since 75% of shelter animals end up getting euthanized (killed). But if you have found a good, kind owner for her, then you should just let her go and consider yourself lucky to have found an owner.
