Make sure you get the proper name, spelling and address of your interviewer. When you are done with your interview, write a quick note on a card & drop it in the mail (that same day). It will take at least 2 days to reach the employer and that's a perfect time to remind them of you.

Better late than never. Just send the Thank You notes. There is no need to go into any explanation for your tardiness. Please try to be better organized next time. Keep some generic , pre-printed Thank You notes and stamps on hand. A week to 10 days would be acceeptable for sending them out when the occasion arises again.
