That all depends on what animal you are referring to. Every species have different behaviours that need to be understood and interpreted correctly in order to not only correctly, but safely handle animals. It is best to start doing some reading on the various behaviours of animals (or at least those you are interested in) to get a handle on what to expect and how to act and react around them.
You can take care of animals by feeding them, bathing them, and making sure that they have shelter. You can also care for them by raising them on a farm or by butchering them humanely for food.
