Storing bananas in the refrigerator will only accelerate the browning reaction. Like most tropical fruits, bananas prefer warm weather. Refrigerator temperatures cause the same cell breakdown that old age does. In the trade this is known as chill injury. Keep bananas out of the fridge until they're good and ripe, and then refrigerate them. The cold keeps them from ripening further. Ideally bananas prefer about 55 degrees F. But unless you've got a wine cellar, room temperature is your best option.

Putting the bananas in the fridge will surely help, although the peels may become an eyesore (brown in color). The fruit inside will still be nice though! Also be sure to remove bananas from their bag (if you buy them like that) soon after you get them.

Answer 2: Putting them in the fridge will make them go brown quickly. Rather place them in a bowl, keep out of direct sun, and you can place a clean small towel over them to keep the sun off. Bananas will eventually go brown anyway, but when peeled brush them with a little lemon or lime juice. I have read somewhere that they can last longer even up to 6 to 8 days if you individually wrap the dark stems in clear kitchen wrap a few times ~ something to do with ethylene gas which is released from the stems and causes the browning in bananas. When this gas comes in contact with other fruits it makes them ripen quickly. So wrapping the stems in kitchen wrap prevents the gas escaping. I have not tried this myself but others have told me it works.
