Well first off you need to complete the Hunting challenges which i believe contain Killing Undead Cougars, Bears and wolves, when all that is achieved the next goal will be to find and Kill the chupacabra, the Chupacbra will spawn around Las Hermaz (The Mexican Church) ride around for a while and the blue mystical creature circle will appear and the phrase "a mystical creature has appeared in the area" will appear in the top right. This is also the same for the horses of the apocalypse. It is easily killed and will never spawn again after been killed.
