If you have owned the Hamster from its baby stage and have gently held it at least once a day and gotten it used to your touch (also if you have always made sure your hands were cleaned before you pet or handle them) then you should be in no danger of being bitten.
usually right after you get a hamster, it is scared. You can tell because it tries to avoid your hand, maybe runs into its house when you open the cage door/lid. It might pee/bite if it is really frightened.
you know when your hamster likes you when she/he does not bite or run away from you when you approach her/him with your hand and will take food out your hand and seems calm wen you hold her/him

Hamster bites can be very painful and often bleed if it is a bad bite. As for infections, you shouldn't get any as long as you clean the wound and put a plaster on it.
Actually, nothing happens when a hamster bites you. But, it might hurt/sting a little bit though and also it may make like a small dent for like 3 seconds.
