The same reason we know that Julias Caesar or Alexander the Great existed - it's based on forensic evidence. When you have no bones or dental records or a living witness who actually saw the person and can't use the scientific method to prove something or someone existed who lived long ago, you turn to forensic evidence. That evidence in cases like this is historical references, written documents and scrolls. In the case of the New Testament which is full of Jesus words and works and a testimony of his existence, you have over 25,000 of these scrolls which have been found, as opposed to other ancient works of literature which may be on the order of a few hundred or so in some cases. This gives great validity and historical significance to The Bible, and the New Testament, which tells about the life of Jesus and his works while here on earth. In any court of Law using the standards of today based on the forensic evidence available to us, his existence would be verified as true.
