Pull one up and see if it is sufficiently well developed. You probably have enough shoots that you can spare a test carrot or three. Anyway, you don't want them clustered too close or they won't have room to grow, so this is a good way to thin a little.
If you pull them too soon, you can eat them, and they will be lovely and tender, but you won't get much carrot for your buck. If you just leave them and leave them, they will be overgrown and thick and woody and start to sprout long secondary roots. Even at that, a late carrot can perk up a stew or furnish flavor for a sauce when it's well beyond the eating-raw stage.
You will first have to pull one carrot up to see if it is well developed. Usually if a carrot has a wide top that sticks from the ground, it is ready to harvest.
However, you will still need to pull one to figure out how big you want your carrots to be before harvesting.
Carrots are good, big or small, but they are tender and sweeter when they are smaller.
carrots will last 4-6 weeks, sometimes longer. before a carrot begins spoiling its texture will become very soft, this is still safe for consumption although not as enjoyable as the fresh product. at the first sign of mould or darkening of the carrot it is time to disregard.

Pull one out. If it looks like a carrot, they're ready
A fork should easily penetrate the carrot without breaking it apart. Cooked carrots should be soft but not mushy.
Try to cook it over and over, got experience! That's the only way!
How to tell me when a Spanskek is ripe
An easy way to tell if your avocado is ripe is by flicking the small brown stem off the top. If it comes off easily and the bit underneath is green, it's ripe. If it doesn't or is brown, it's not ripe.
when it turns a brown and yellow.

A lemon can be used before it is ripe, but it will not have as much juice and be harder to squeeze. The ripeness of a lemon can be judged by its color, and it is ripe when no green tinge remains.
Ripe, as in food ripe means it is ready to pluck off the tree and eat. Like peaches, they have to be ripe. Bananas can be overripe though. In other terms I don't know another definition for ripe other than that...

You will find most nuts are ripe right about the time of first frost. But to be sure watch the squirrels. They will tell you when the nuts are ripe. I will bet they will get more than you do. You also can press into the husk with the ball of your thumb and if it leaves a dent the nut is ripe. Good Luck
You wait until they're ripe and press the A button when you're in front of them. If you can't tell when it's ripe, then press A anyway and on a day it is ripe you'll pick it. It's not that hard, really.
