You can log off from Gmail app in Samsung Galaxy Pop. The log off is not present in the application. You have to go to settings, account, gmail account to log off from there.
One can log off of Gmail in Galaxy S3 by going to settings and then accounts. Click on Google account and the gmail address and the remove account option. Alternatively, while on the youtube app, touch the options button (next to the home button at the bottom) and touch sign out at the bottom, then tap sign in and add a different account.

I wasn't able to sign out of my work email on my Samsung mini, but what you can do is switch of the notifications tag that way you'll only see your email by actually going into your mail account, they wont pop up on your phone status bar all the time. Go into your email hit the bottom button (menu) on the left. go to setting at the bottom of the list. choose the email account you want, scroll down to email notifications and un-tic the box. There is a notification dropdown (pulling it down from the status bar) where you can see the latest Gmail messages without having to open Gmail separately. In the dropdown, you can read the body of the message, and can either reply, archive, or clear it off the dropdown.
To log off of twitter from samsung tab, look at the tool bar in the top corner. There will be a icon that when pressed will show quick account settings. One of the options will be to log out.
