There is no logging out of Mac Mail and no need to do so. You just click the RED button to close it out or click the word Mail and then click Quit Mail to completely close the application. Why would you want to log out and then have to log back in the receive your mail.
You can do so by going to FaceTime at the top part of the display, then click Preferences. There is a switch next to FaceTime. Flip it to "off", click Done and that should log you out.

No, only an Admin account can administer an account. If you own the computer you can make yourself an admin account and log back into the other account when your done. You can ask someone with an admin account to give you more freedom if they won't make you an admin.
