in halo 3 you start up a custom game and go under game types and go under infection and play on of the default types or make your own, then a get a few people to play with you and during one round you will maybe be infected.

Either get wifi or ethernet hooked up to your xbox and go into matchmaking or for two player offline just go to custom game.
