1 1/2 cups graham cracker crumbs1/4 cup sugar1/2 tsp. cinnamon ground 6 tbsp. butter melted 3-8 oz. packages cream cheese3 tbsp. flour2 eggs2 tsp. vanilla extract 1/2 cup sour cream1 cup sugar2 egg yolks grated rind and juice of 2 lemons Mix ingredients for cake crust. Press crust mixture into a 9 inch spring form pan. Using an electric mixer, blend filling ingredients until smooth. Pour filling mixture over the crust in the spring form pan. Bake in a preheated oven at 350 degrees for 50 minutes. After cooking is complete do not open oven door for another 30 minutes in order for cake to cool. Chill for 4 hours before serving. Serves 12.

Combine softened cream cheese and lemon curd in a kitchen aid or in a bowl with a hand mixer. add sugar and cream together. you may add lemon zest if you wish. beat in eggs one at a time, fully incorporating after each addition pour into shell in spring form pan and bake in oven until set. place a pan of water on a lower oven rack while cake is baking. 1 1/2 lbs cream cheese 8 oz lemon curd (harry and david's is great for this) 1/2 cup sugar 7 eggs crust 2 cups ground vanilla wafers 1/4 lb butter melted combine butter and ground wafers in Cuisinart or by hand. mix should hold together when pinched. press into bottom and up sides of spring form pan and bake at 325 until crust is golden. cool completely before adding filling

Use a normal cheesecake recipe. Add in cherries to the batter beofre baking, or at least the cherry juice. Add in some red food coloring, if desired, to enhance the red color of the cheesecake. If you have it, add in a small teaspoon or so of cherry extract. When decorating, use a cherry-vanilla frosting or real cherries.

Step 1

First make the Oat Pie Crust - see How to Make Oat Pie Crust. After taking it out of the oven let it cool.

Step 2the filling

Mix together all the ingredients for the filling. If you consider you like it sweeter, you can add more sugar. Before you add the eggs, beat them lightly with a whisk.

Step 3fresh from the oven

Pour the filling in the pie crust. Preheat the oven to 400 F. You will have to cook the cake using the bain Marie technic - you will have to put the pan in a another pan with water. Bake the cake until the edges start to harden but the middle in still soft. You can use a toothpick to check. Stick it into the cake and if it comes out clean, the cake is ready.

Let cool and the let chill in the fridge before serving.

There are two basic styles of cheesecake -- soft and fluffy or high and firm.

A 9" springform pan is a necessity for baking any cheesecake. Most cheesecakes will crack while they're baking, too, but that can be avoided. Once the crust and filling are in the pan, wrap it tightly with heavy aluminum foil. Place the wrapped pan in a larger one, like a roaster, and fill that with 1 to 1 1/2" of boiling water. Bake at 325º for 45 minutes. It will still jiggle, but will harden as it cools. Some cooks leave the cake in the oven -- heat off -- with the door ajar for several hours. Some slip a knife around the rim of the cake pan and let it cool at room temperature. The water bath and long, undisturbed cooling time yield a successful cheesecake.
