you roll puff pastry into 2mm thick, 10 cm wide disks and arrange them on a baking sheet. you thinly slice eating apples and mix them with lemon juice so they don't loose colour. you arrange the apple on the tarts and add a dob of butter to each. sprinkle with caster sugar and cook at 200 degrees C (fan) for 10-12mins. spread each tart with apricot conserve and leave to cool. enjoy
