1. Use a mellon baller or spoon to scoop out and round balls of ice cream.
2. Place them on a non-stick silicon sheet or wax-paper-lined tray. Freeze until totally solid.
3. While they are freezing, prepare chocolate coating.
4. Set up station of a place for the ice cream tray, spoon to did into chocolate with, melted chocolate coating, any additional toppings you might want to add, and another non-stick silicon / wax-paper-lined tray. (You will want to be able to work quickly.) (Another pre-cooled tray will work well.)
5. Take out the frozen ice cream balls.
6. Coat them in chocolate and place on the second tray.
7. Place the chocolate coated ice cream balls in the freezer for a few hours (over night is best.).
An easy way would be to melt chocolate (Milk Chocolate or semi-sweet chocolate would probably be the best) and the coat the candies using that.
