I assume you are going after trout if you want a good cornmeal bait, below is my recipe that has worked for years:

  1. Get 1 cup of Cornmeal and add a quarter cup of water. It should form a nice paste if you do it properly. If not then add a bit more water or cornmeal to make it so.
  2. Crush up two cloves of garlic and add it to the mixture.
  3. Find some type of soft cheese (havartie (?sp)) and add it as well You can get by with grading a 2-2-2 inch block of it (2 inches in length width and height) and mix that in with your garlic and cornmeal.
  4. Get some canola oil and fill a small pot about half full with it. Make small round balls (big enough for the fish you intend to catch) with the cornmeal mixture then drop them into the oil for 60 seconds (or untill just slightly browned on the outside) as soon as the oil starts to bubble.
  5. Take each small ball out with a spoon and put it on a piece of paper towel to dry and cool off. Store in a ziplock bag when they are room temperature.

When you are ready to cast your lines just spear one of these small balls with your hook and let the fish go crazy. They are always attracted to the smell of garlic and quite frankly you will never go back to store bought bait if you get it right.
