~-~-~ Whoever says that you can't make custard without milk because it will taste bad obviously hasn't tried it for themselves :) I doubt making fresh custard without milk would taste very nice (I am yet to try that method), but I do frequently prepare dry custard using water to cut down on calories. However, when making the "paste" in the beginning, I use a splash of milk (I'd say 50ml or so of skinny/low-fat milk out of every cup of liquid required) rather than water which I've found helps to add at least a bit of creaminess to the dessert and prevent lumps. Mix it until smooth before topping up with water and cooking as usual. It still doesn't taste as rich as it does when made with milk, but it satisfies my cravings so I definitely wouldn't call it a fail recipe! I make mine in the microwave and use a little over a tablespoon of powder for every cup of water. It bubbles up surprisingly high, so use a bigger bowl than you'd think you'd need and pop that on top of a plate for easy clean-up if yours happens to bubble over. Microwave on HIGH for 1 minute before whisking briefly and microwaving again for a further 4 minutes or so in 1-minute bursts. It begins to want to bubble up from this point, so keep a constant eye on it if you're using a small bowl. There isn't really a set time for how long it takes to cook as this depends on your microwave settings, but mine is an old 800w piece of junk and it only takes about 5 minutes in total! Lastly, I like to add in sugar/Splenda and vanilla (optional) after it's cooked rather than before. Enjoy! ~-~-~
