At the main menu, it'll say Nintendo WFC connection (I think that's the name), choose it. After connection, go to friend roster under friends brawl. Once there, select the top icon and you can set messages for taunts, an avatar, a message and a name. The taunt's text only shows up when playing in a brawl with someone who is registered on your friend's list.
