Water is usually measured by volume, that is, in liters or gallons.
To find the amount of water in a swimming pool, find the volume by multiplying the length, by the width, by the depth. If the pool has a deep end and a shallow end, you can usually estimate the average depth as the same depth as the half-way mark.

Conductivity - the higher the conductivity the less pure the water. pH - the further you get above or below pH of 7, the less pure the water. Beyond these simple measures, it takes various specialized instruments to monitor-for / detect contaminants such as nitrate, arsenic, and so on. There are some kits that can detect some contaminants, but usually a "grab sample" is obtained in a clean sample bottle and sent to a laboratory for analysis.
