With carrots & most veggies you should bring to a boil then simmer only until tender to preserve nutrients & flavor. For carrots this takes about 10 minutes.
In a mild climate, carrots are sown anytime except late autumn and winter.
To safely preserve carrots using the water bath canning method, you should first wash and peel the carrots, then cut them into the desired size. Next, blanch the carrots in boiling water for a few minutes and pack them into sterilized jars. Add boiling water to cover the carrots, leaving some headspace. Finally, process the jars in a water bath canner for the recommended time based on your altitude.
To properly blanch carrots before freezing, first peel and cut them into desired sizes. Then, boil a pot of water and add the carrots for 2-3 minutes. Quickly transfer them to an ice bath to stop the cooking process. This helps preserve their color and texture before freezing.

Carrots are usually grown in the Autumn-Summer season. Very rare in Winter time, and found in Spring, but not at best form.
