This is a toughie. Aloe vera is proven to be most useful fresh, and only stores in the fridge for a week tops. If you absolutely must preserve it, store the gel in an airtight tupperware in your freezer. If your plant has grown too large and you're simply looking for uses for the gel your prunings are giving off, try slathering a coat on fruits and vegetables. It's non-toxic, doesn't affect the taste and has been proven to make them last up to five times longer (and in better quality).
