Easy question for me to answer just put lemon or vinegar with oil on the food type if you are trying to do that with a potato you must put oil and lemon juice and it can be a squeezed lemon. It doesn't have to be the ones from the store because those are too unhealthy.

To remove the smoked burned taste from food that you have cooked, you should remove it from the pan and put it into a new pan. Leave the burned portions of the food that is on the bottom of the pan. Only remove the unburned parts of the food.

If you don't have a ham hock what can you use?

Ham hocks are for flavor. A piece of country ham can be used. I've also known people that use smoked turkey wings to get that same flavor. If you use country ham, cut it in about 1" pieces so it will cook quicker and also release more flavor. Bacon can also be used to provide nice smoky flavor.
