1: Remove the car's windshield wipers. One is longer than the other, so mark which arm goes on which side of the screen if you've not done this before. A sticky note does the trick.
2: Open the hood.
3: Remove the black plastic trim that sits across the bottom of the windshield. (You cant get the trim off without removing the wipers)
4: The pollen filter is located under left hand corner of the windshield, assuming you have the hood up and are viewing the engine bay from the front of the car. It's tucked away under the shelf-like structure protruding from the base of the windscreen. It's not obviously visible because it's obscured by a black plastic cover which keeps water off of the filter.
Pull the plastic cover off and remove the filter.
5: Replace the filter and cover. It's fiddly. Patience and lots of wiggling of the plastic cover is needed. It's robust and flexible, so don't be too gentle with it.
6: Replace the windscreen trim and your windshield wipers - job done.
Good luck!

According to the 2008 Mercury Sable owners manual : ( the Motorcraft FL-400-SB12 engine oil filter is used for the 3.5L V6 engine )
Today (6/20/12) after my CARMAX 52,000 Maintenance was completed I had a note on the invoice that my cabin air filter was dirty and needed replacement. I asked why they did not replace it and was told they did not carry the part. I checked on line for the filter and received information that the part number was PC5082 for the 'Cabin Air Filter - 1996 - 2008 Mercury Sable' $6.99. I called my local Ford Dealter 'Liberty Ford 410-655-2000' to see what the cost of the part and installation was and was told that the 2008 Mercury Sable does not have a Cabin Air Filter. So your guess is as good as mine.
I was looking at one of the Ford websites and it shows for a 1994 Mercury Sable ( Motorcraft FG-800-A engine fuel filter , all engines , without flex fuel )
