Make sure there is a memory card with enough room on it in the PS2. Find a save point and access the in-game menu, select save, select the correct memory card slot and save.
You probably don't have the right kind of memory card. In order to save a PS2 game, like FF VIII, you need a PS2 memory card.

After they remake Final Fantasy 6, 7, 8, 9. Although 6 is on the ds/advanced so maybe in another 5 years. But in all likelihood, never. Why remake a game from the previous generation console. PS2 isn't that old yet.
