How do you save on Super Mario Bros 3?

you have to finish a ghost house or a castle or anyone of the switch palaces. When you finish one of them a message will pop up saying "save & continue" or "save do not continue". Select "save & continue". Everything will be saved.

On NES, you don't.

On GBA, if you have not completed the game, then you can only do a full save after beating a fortress or airship. You can quick save at any time by pressing start on the world map. However, this save is deleted once you load it up again. Once you have defeated Bowser, you can do a full save at any time, however this will kick you out to the title screen.

Pass a castle or fortress or complete the the game to save whenever you want.
after you have finished certain levels, like level 3 in world 1, go up to the mushroom above the level 3 space and it will do something and might let you save.
