Goodbye is literally 'Adios', but you could also say "Nos Vemos" (See You), "Nos Vemos al rato" (See you soon), etc.
Take Care is "cuidate".
Language itself is not "mexican", it is "spanish".
And you can say "adios" (pronounced ad-ee-ohs).
