I wouldn't use the word either in that instance. I would say " Any two of the hundred will do." the word either is for use when talking about two people or two groups. You might say " Send in either one of the two applicants now." or "Either of the two groups may come in for tea now".
You can say either cell phone or mobile phone on a resume. Either will be acceptable and will be understood by the reader.
