Note this answer refers specifically to American Sign Language, and should not be misconstrued to refer to any other Sign Languages:
There are several ways to say faith in American Sign Language. I will mention two of the more common ones.
One of the most common ways is similar to the sign for "believe". In this case, the non-dominant "F" hand is stationary in neutral space (i.e. the area in front of your chest). The dominant hand is either in a "one" hand-shape or an "F" hand-shape and is placed first against either the temple or the forehead, and then it moves downward to the rest on the top of the non-dominant "f" hand. (When the index finger is used, it changes to an "F" hand-shape prior to resting on the non-dominant hand.
Another more recent version is to take the non-dominant "F' hand and place it in neutral space. Then you will take the dominant "F" hand and bounce it repeatedly (in subtle movements) against the non-dominant "f" hand as both hands move forward.
Note: Try to avoid using the second version above when the connotation is closer to "belief", as this version is closer to the meaning "faith as belief in action" or "moving forward by the power of faith." For example, you would not say "I have (second version) in you" because the meaning is closer to belief; therefore the first more widely used example is better and has a more general and adaptable transliteration.
To sign "faithfulness" in American Sign Language, you can use the sign for "belief" or "trust" and incorporate a movement that signifies holding on to or maintaining that belief or trust over time. This gesture can represent the concept of faithfulness within the Fruit of the Spirit.
You can't speak sign language but you can "sign".
In American Sign Language, you can sign "WHEN YOU BORN?" to ask someone when they were born.
To sign "Are you happy?" in American Sign Language, you would sign: YOU HAPPY? with raised eyebrows.

In American Sign Language (ASL), you can sign "I know" by pointing to your head with your index finger.
You can't really say it, can you?
