The usual way to secure a shared folder is to allow Full Control in the Sharing options and tighten down the access via the NTFS permissions.
You need to know exactly who should have access to the folder and what they are allowed to do with it.

You don't really need to "secure" a folder to send it over the network as the wireless encryption takes care of it for you. You can use a third party folder encryption app or compress the folder and give it a password if you really want to have overkill. If you're just on a Home network, as in using it in your home, then all you need to do is set the wireless encryption to WPA-2 (it's the highest non commercial encryption) and everything you send to the other computers is encrypted. Depending on the uniqueness of the password, (length of password, how many numbers, random letters, uppercase letters, etc.) it could take years to decrypt even with a high end "cracker".

There is no My Network Places website. My Network Places is a folder within your computer system where people can find the different Network connections to the computer.

Easy. Make sure the folder you want to map is shared. Then go into your My Network Places. Find the computer in the list that's sharing the resource you want to map a network drive to. Double-click on it and find the folder to map. Right-click it and and select Map Network Drive. Then configure your options as you see fit, such as the drive letter.
You can use a flash drive If both computers are on the same network and the destination computer shares a folder with other network users with write permission, then you can go to my network places, open the shared folder on the destination computer, then drag and drop the file like you would if you moved the file from one folder to another on the same computer.
