You see colors when light strikes certain types of cells in the retina of the eye. These cells are called photoreceptors. The main types are called rods and cones. There is a third type which works when a human either has nor rods and cones or has ones which are blocked by the use of chemicals. Cones are the main source of color recognition. There are millions and millions of them in the retina. There are three types of cones, each being receptive to a different wavelength of light. Each wavelength corresponds to a different color. When light strikes a photoreceptor it releases a chemical that begins a complex process that enables the brain to recognize the color. To see color properly, a person must have all three types of cones, otherwise the person's eye will not have the photoreceptor that reacts to that particular wavelength. The chemical process from the cone to the brain where color is truly "seen" is too involved to be gone into here. Objects absorb colors and they reflect colors. For example some apples are red.the apple absorbs every color except for red. The apple reflects red.
At the molecular level, these color photoreceptor neurons must express color sensitive proteins called "opsins". They must also express only one opsin gene. The pattern of opsin gene expression is used by the brain to interpret the photons from the eye to see in color.
