It depends on whether the digital watch has a digital display (LCD) or a standard mechanical display (a clock-face). The latter is probably simpler to understand as it is primarily an analog computer driven by a digital counter. A quartz crystal vibrates at a consistent 32,768 cycles per second thus a 15-bit digital counter increments with each cycle. Each time the counter overflows it returns to zero, which triggers a step-motor to advance the second hand by one second which, in turn, drives a standard clockwork mechanism advancing the other hands accordingly. The tumblers denoting the day are linked to the clockwork mechanism, although sometimes these are presented in a digital LCD form. An LCD watch has no moving parts besides the vibrating crystal, thus is entirely digital, with several digital counters to denote the passage of time from a preset base time (the time you set). Simple logic gates present the actual time upon the LCD display in numerical form or in a more graphical analog clockwork form.

I strongly suspect that if you use the stem to set the analog time, it will also set the digital time.To use the stem to set the time, look at the underside of the stem. You should see a slight indentation in the case, which will allow you to slide the nail of a finger (for most people, it's easier to use the middle finger-- and no jokes about that, please!) behind the stem head.Gently pull outward on the stem (it probably will take two "clicks" to come out). Don't pull so hard as to remove the stem from the watch; if you do that, you will likely end up with a $30 hunk of useless metal and plastic.If you're not sure how many clicks are required, pull the stem out one click. Try (gently!) to turn the stem (either clockwise and counter-clockwise). If the hands move, you've got the correct number of clicks. If not, try pulling out one more click.Once you are successful in getting the hands to move, turn the stem so that the hands display the correct time. Then gently push the stem all the way back into the watch.Note: If the digital display shows AM and PM, or a 24-hour display, you may have to repeat to move the hands around one more time to get from AM to PM or vice versa.
