First, you have to buy a ship with cannons. To do that, go to Dragon Cove and enter the room with the big ship. Talk to the first man you see there. Say "I would like to buy a ship". Then, a screen with all the ships you can buy will pop up. All the ships you can buy have cannons, so it just depends on how many doubloons you have. After you buy a ship, go back to the docks and click "Embark" on your ship. Then press the Spacebar to pull the anchor up. To shoot, use the targeting reticle (the thing you aim with, shaped like a +) to aim at a ship and click to fire a cannonball.
