You block the oxygen by adding ascorbic acid (also known as vitamin C) to the apples to prevent the chemical reaction from taking place. Orange juice contains a lot of ascorbic acid. Placing an apple slice in contact with a orange slice or coating an apple slice in orange juice introduces ascorbic acid into the apple cells. Also, the orange juice and slice act as barriers to air, preventing oxygen from reaching the PPo molecules.
