The most effective way to get rid of your gag reflex is to slowly desensitize your uvula. This is achieved by touching and agitating it carefully with a foreign object -such as your finger- without actually making yourself vomit. Continue doing this every day, and eventually your gag reflex will go away.
considering that it is a reflex, there really is no "overcoming" it. Be prepared for the worst if something is causing the gagging, like a dental exam, coughing, tooth brushing, etc. One thing that you can teach the child to do when he/she feels the gag feeling is to breathe slowly and deeply until the feeling subsides. Sometimes holding one's breath for a few seconds or swallowing can subdue the feeling as well.

I have acid reflux and yes it does cause some choking...if food comes up and you swallow, you may end up choking on this partially digested food. Also, i sometimes wake up just choking on hot air.
