You can't, you chose your eyes and you'll keep them. But, you can buy items like oculus magica/mythica or other items and use those eyes.
You also can change your whole avi so that you could also change your eyes.
Go to My Gaia> Account settings
Under avatar gender you see a little tekst with "deleting your avatar"
If you click on it you'll first delete ur avatar, and then create it again and you can chose your different eyes, hair and skin.
