Lunging, free schooling, long reining, all that, and use your voice allot when changing speed and gait. when he has learnt the word canter, and your horse is confident in trot, you are ready to progress to cantering. Have an active trot round the pen/school/arena, what ever you would like to call it, sit for 3 beats of the trot, then ask with your voice. The horse is likely to go off balance and on the wrong leg for his first canter, but it will come in time, but it is important you remain in your centre of balance to help him out. Once he has got used to the canter a bit more (or if he has a habit of being quite lazy) then slightly use your leg, putting the outside leg slightly behind the girth etc, as well as using your voice. after a while of this he will also become used to the leg command. If he has a habit of striking on the wrong leg after allot of cantering, then use circles, and he should automatically change his leg, or go back to trot and keep asking for canter until he strikes on the wrong leg. Remember not to canter for long at first, as your horse will have to build up the muscles to help himself remain balanced, so after a few strides it is a good idea to go back to trot, And gradually increase the amount of time spent cantering.
