When a woman is interested in you, she will laugh at your jokes, smile a lot, flirt, position her body towards you when talking (often leaning in), and if she's very confident, she'll likely try to find an excuse to touch you.

In the case of a woman who is shy, she will likely be nervous, so watch for playing with hair or whatever is in front of her like her glass, napkin, pen, or silverware. She will also very likely excuse herself at least once to go to the ladies room to make sure she feels she is looking her best for you.

You can also tell by her response to you speaking to another attractive woman. Have someone else observe her reaction to this. She will at the very least notice the exchange, and she may appear visibly disappointed. If she thinks you're not looking, she might even throw the other woman a dirty look (perhaps even without knowing it).
