Just tell them that you are not at all interested. If they persist then get in touch with someone in authority in the Mormon Church in your local area, the Bishop of the local Ward would be a good place to start..

That's only one example, but the point is to be firm and decisive when declining the invitation. If you say "I don't want to" it comes across as being hesitant, rather than saying no.
