There are several ways, generally only art professionals can do this but methods include calculating the quality of the materials vs. the yellowing, how deteriorated the painting is, cracking, the style and origin of the painting tells a lot about how old it is as wall, who it is said to be by can determine age, etc. I believe it's a very long complicated process but without the proper training and tools it's probably mostly just guesswork.
The best way to find anything out about an unsigned painting is to take it to an art dealer. An art dealer will be able to examine the elements of the painting and tell you where it came from and who painted it by the style.
