If it is stored in the fridge, take it out at least an hour before it is required. Take a blunt edge knife, or a knife spatula, and scoope out a huge lump of frosting dolloping it in the middle, do this again until you have a big amount of icing in the middle. Then using the flat edge of the metal spatula, pull the icing from the middle, gentle scraing it to the outside. Repeat this process until the cake is covered in a thick neat layer!
