Turning a turkey while inside the oven is risky - to the bird, the oven and YOU! If it's a lighter bird (less than 12 lbs) just slide the rack out far enough (watch that you have room to do this without burning your arms). For a larger turkey, you're better off removing it from the oven to turn it.

Then, begs the question, why turn it at all? Breast up will give you all the savory juices in the bottom.

Can you fry a turkey in a large enamel canning pot?

A turkey can certainly be cooked in a canning pot but it would be more like "broasting" than frying. It would be very difficult to turn the turkey and ensure that it wasn't burning on the bottom while the top was still raw unless the heat was very low and there was moisture (broth, wine, beer, etc) to help the cooking process.

Can youstart a turkey cooking and then turn the oven off for a couple of hours then restart?

You could do that but it wouldn't cook your turkey at all. Other than scorching/burning the skin completely off. Actually your answer is incorrect. My Grandmother cooked her turkey for over 50 years by putting it in a large roasting pan, with a lid. She would then put it in the oven at 500 while she was getting ready for bed. Always at 500 for an hour, then she would turn the oven off. NEVER open the door...the next morning when she got up she knew exactly when to take it out of the oven. The turkey was THE BEST I have ever eaten. Very moist, VERY moist and juicy the BEST flavored turkey I have ever eaten. She didn't cook the dressing with it, that was done separate using the stock from the turkey.

Does cooked rice dissolve in water?

No, it will probably turn to mush after a while if you continue cooking it. If the rice is ground to a fine powder, further cooking may result in an emulsion (as in babies rice cereal) but it will not dissolve.
